When I think summer, I think of happiness!
Summertime is my favorite time of year! It means, no school for the kids, swim team, lazy days doing whatever we want, being in the pool, lake, river or at the beach, backyard fun, endless playdates and late night slumber parties, and in our house lots and lots of watermelon. Because let's face it, watermelon is best in the summer!
This past week the kids were off on Spring Break, which means some of those things: well at least the no school and days of doing what we want. It was rather cold for being in the water here and we still had sports and an amazing week with even some watermelon!
Watermelon Cupcakes that is.
Ever heard of them or seen them? Nope? Us either! And I honestly didn't know what to expect at first. But my whole house smelled wonderful while the mixer was mixing the mix and then when they were cooking! Kind of reminds me of the Watermelon Bubbleyum I loved as a child. We mixed some up for the first day of Spring and shared them with the cousins over the weekend! They were such a hit! The whole 2 dozen were gone in no time!
